Here’s an idea for a hearty and healthy meal when you are pressed for time and don’t want to resort to junk food: INSTANT COUSCOUS
This pebbly grain made from semolina flour is traditionally eaten in western North Africa. Think of it like a Moroccan pasta. The instant variety cooks quickly and can be mixed with just about anything-the more variety of ingredients you add the better.
Simply boil water with a pinch of salt and a pat of butter or oil. Add couscous, cover and turn off heat. Let sit until all the water is absorbed, about 5 minutes. Try not to pick nor stir the couscous while it does its magic.
Hint: It is ideal to have a glass lid so you can monitor the progress without touching anything.
When done, fluff with a fork and add whatever leftovers you have in the fridge. Suggestions for flavour combinations are:
- spinach, tomato, olives, pine nuts, basil and parmesan
- carrots, raisins, lemon juice, cumin, cinnamon
- pistachios, dried apricots, cumin, cayenne
The box will tell you how much water, salt and oil/butter to use. If you don’t want to use the whole box the standard ratio of water to couscous is 2:1.
