Busy Baking…Personal Pies

These mini apple pies were made from scratch – the only thing I didn’t do was grow the apples myself. The dough is vegan and is made with spelt flour and the filling is a spicy akane apple dressed in a little lemon juice and some give-me-some-lovin’ brown sugar. Despite the healthier ingredients, it ended up tasting like a McDonalds apple turnover. Hmm…let me tweak the recipe.

And by-the-by, the pie with a gaping hole in it looks that way on purpose. It was my tester pie to make sure the filling and dough were cooked through. Always have a test piece and be your own poison taster.
