…Working on my vegan cookie repertoire. I had a hit and a miss. The vegan chocolate chip vegan cookies are The Bea’s Knees but the vegan shortbread didn’t make the cut – literally. They remained soft from pre- to post- bake and fell apart when the oh-so unassuming paring knife made its way through the baked mush of Earth Balance buttery spread, sugar and flour. I suspect the cornstarch may have had something to do with the too-soft texture. And the smell of baking oil (which still lingers hours later) is off-putting. Edible but not presentable and I wouldn’t insult shortbread by suggesting that this concoction has any resemblance to the traditional Scottish cookie. Some things are better left as they are. Sorry vegans, but I believe shortbread is best left to butter.
