Here’s what I’ve been up to lately…
These are gingerbread cookies made with spelt flour and an assortment of ‘Silk Road’ spices. Named after the famous trading route from the Far East to the Near East, Silk Road Spice Merchant is a must-see for foodies visiting Calgary. I used their ginger, clove, nutmeg, allspice and the ultimate in cinnamon (actually cassia): Vietnamese Saigon.
Decorations are edible 24K gold leaf, dark chocolate ganache and a lemon-spiked icing sugar glaze.
Thanks to the spices, date molasses and brown sugar, no one detected that these were made with whole-grain flour. The spelt adds fiber and the spices enhance digestion. I would say this makes for a ‘healthier’ treat.
Totally vegetarian but not vegan. These contain eggs and dairy.
