Meatless Monday – Hummus on the Nile

Egypt has given the world many things: one of the 7 wonders of the world, beer and great vegetarian food.

What you say fuul?

Pulses, grains, vegetables and spices combine to make numerous tasty dishes to keep you satiated at every meal. This edition of Meatless Monday will have you feasting like a Pharaoh and eating like an Egyptian all day long.

Breakfast
Fuul Medamas
A little fava bean to start the day. This dish, traditionally eaten at breakfast, is fava beans cooked in oil with cumin, garlic, onion and tomato. For a Egyptian Tex-Mex fusion, crack an egg on top of each portion and finish cooking in oven until done.

Lunch
Falafel
Spiced chickpea balls fried and often eaten in pita bread with tomato and cucumber. For a healthier version, skip the frying and bake the balls instead.

Supper/Dinner
Kushari
A full meal with spicy tomato sauce, onions, rice, lentils, chickpeas and macaroni. The secret besides quality ingredients is frying the onions until crispy.

Snack
Hummus
A chickpea paste with tahini, lemon juice and garlic. Great for dipping vegetables but for a complete protein eat with pita bread.

And I won’t even discuss pigeon. Enough said.
