The 12 Days of Christmas: Noel Nog

Installment #4: Noel Nog. I surprise myself with the many ways one can make use of Noel Nog.

Here’s another creative concoction:
Cranberry pear hot toddy
. Get festive with this spirited drink.
Combine Noel Nog, some white chocolate (or dark and/or vegan white) and cranberry pear ‘sauce’. Heat until combined. Stir and enjoy.
Cranberry pear sauce?
After cross referencing several online recipes for cranberry pear sauce I came up with my own version, using ingredients I had to hand:

  • frozen organic cranberries
  • pears and pear juice
  • orange zest and orange juice
  • Calvados i.e. apple flavoured liqueur
  • maple syrup
  • agave nectar
  • vanilla
  • almond extract
  • clove
  • ginger
  • cinnamon
  • nutmeg

I did the ultimate bakers’ faux pas and didn’t measure a thing! Instead I relied on my senses (sight, smell, feel and spidey) to perform alchemy on these ingredients. The result? A sweet and gooey spread that tastes like Christmas. Thanks to heat and time the naturally occurring pectin in the cranberries performed their own alchemy, turning the mixture thick and gooey.
