Meatless Monday – Mac and Cheese

Today’s Meatless Monday is simply a recipe for good ole fashioned mac and cheese. It can be made with or without dairy.

Ingredients:

  • 1 Tablespoon butter or vegan substitute (e.g. coconut oil)
  • 2 cups dry pasta (elbow macaroni, whole wheat penne, maple leaf-shaped, etc.)
  • 1 cup almond/rice/coconut milk
  • 6 Tablespoons nutritional yeast flakes
  • 1 Tablespoon lemon juice
  • 2 teaspoons prepared mustard
  • 1 garlic clove, minced
  • 1½ teaspoons onion powder
  • 1 teaspoon salt
  • ground black pepper to taste
  • 1 Tablespoon arrowroot powder
  • 1 cup cheese, either vegetarian or vegan
  • 3/4 cup puréed pumpkin or butternut squash
  1. Cook pasta, then set aside.
  2. Melt butter. Add all ingredients up until the arrowroot powder and use a whisk to combine.
  3. Add arrowroot powder and continue to whisk over medium-low heat for about 5 minutes.
  4. Once mixture has thickened add the cheese and stir with wooden spoon to melt. Add squash and continue to stir until mixture is smooth and uniform.
  5. Add pasta and mix until fully coated.
  6. Place in an oven proof dish. You may wish to grease it a little for easier clean-up later on.

Topping:

  • ½ cup bread crumbs
  • 1 Tablespoon butter or vegan substitute (e.g. coconut oil)
  • paprika
  1. Melt butter. Add bread crumbs and mix until combined.
  2. Put on top of the mac and cheese mix. Sprinkle on paprika. Cover dish with lid.
  3. Bake in a preheated 350ºF oven for 20-25 minutes. Remove lid, let sit a few minutes then dish up and serve.
