This Meatless Monday serves up a recipe for quick and easy to prepare protein.
½ block of firm tofu, cubed
½ cup organic ketchup
1-2 Tablespoons of fair-trade brown sugar
1 garlic clove, minced
1 Tablespoon each of apple cider vinegar and vegan Worcestershire sauce
1/4 teaspoon of paprika
2 Tablespoons of water
a sprinkle of celery salt
a splash of liquid smoke
(salt and pepper to taste if desired)
*A sprinkle of arrowroot powder thoroughly mixed into the sauce will help thicken it when baked.
*The longer the tofu is left to marinate in the sauce the more the flavour will infuse the tofu.

- Preheat oven to 350ºF.
- Whisk together all ingredients. Add tofu cubes and mix gently to coat.
- Bake on parchment lined pan in oven for 20 minutes. Remove and let cool 5 minutes.
- Serve with a side of brown rice and some steamed green vegetables e.g. bok choy, broccoli, spinach.
