Meatless Monday – BBQ Tofu

This Meatless Monday serves up a recipe for quick and easy to prepare protein.

BBQ Tofu

Ingredients

½ block of firm tofu, cubed
½ cup organic ketchup
1-2 Tablespoons of fair-trade brown sugar
1 garlic clove, minced
1 Tablespoon each of apple cider vinegar and vegan Worcestershire sauce
1/4 teaspoon of paprika
2 Tablespoons of water
a sprinkle of celery salt
a splash of liquid smoke
(salt and pepper to taste if desired)

Tips:
*A sprinkle of arrowroot powder thoroughly mixed into the sauce will help thicken it when baked.
*The longer the tofu is left to marinate in the sauce the more the flavour will infuse the tofu.

Method

  1. Preheat oven to 350ºF.
  2. Whisk together all ingredients. Add tofu cubes and mix gently to coat.
  3. Bake on parchment lined pan in oven for 20 minutes. Remove and let cool 5 minutes.
  4. Serve with a side of brown rice and some steamed green vegetables e.g. bok choy, broccoli, spinach.
