While you carnivores will be roasting turkey I’ll be roasting a sugar pumpkin. For the first time ever I made pumpkin pie from scratch. There comes a certain satisfaction when you make something yourself and it turns out successful.
Simply take a sugar pumpkin, hack it in two with a vegetable cleaver and scoop out the seeds. Save them to plant or eat.
Massage a light coating of vegetable oil (grapeseed is ideal) over the flesh. Place pieces face down on a parchment paper-lined cookie sheet and roast in a preheated 350°F oven. Bake 30-45 minutes; timing depends on how efficient your oven is and the size of your pumpkin pieces.
When flesh is soft, remove from oven and let cool. Spoon flesh away from the skin, then purée in a food processor. Your pumpkin is ready to be mixed with sugar and spice and all things nice. Happy pumpkin eating!
