Berebere is a spice mix from Ethiopia. Here are some recipe ideas on how to use it.
berbere pancakes – grate 1 sweet potato and 1 regular potato and mix with ½ tablespoon of berbere spice, 1 small onion (chopped), 1 garlic clove (minced), 1 teaspoon of nutritional yeast, a dash of salt and enough matzo meal or bread crumbs to bind together. Bake in 350ºF oven for 30-40 minutes.
ber-burgers – Cook ½ cup red lentils; set aside. Steam 1 sweet potato; set aside. In pan with water, cook 1 small onion, chopped with 1 garlic clove minced. Add a teaspoon of oil and 1 tablespoon of berebere spice. Stir. Add in a chopped tomato and a teaspoon of tomato paste (ketchup if you don’t have any). Cook a few minutes. Add lentils and sweet potato. Stir and smash the mixture together. After a few minutes, add 1 tablespoon of flax seed and ¼ cup of bread crumbs. Let cool, then refrigerate. When mixture is cold, roll into burger size portions and bake in 350ºF oven for 20 minutes.
Berbere is on the spicy side due to its chili content. Adjust amount used accordingly or make your own mix customized to your heat tolerance.
