Meatless Monday – Something’s stewing

stew: a dish made by stewing; traditionally contains meat and vegetables

Stews are versatile, comforting and easy to make. They are a great way to get your veggies and protein and can be eaten on top of rice, couscous or other cooked grains. And in cold weather, stews make a hearty meal that can be easily transported.

A crock pot/slow cooker makes stewing very easy. A warm meal will be waiting for you for the time you set. Check out the numerous recipes online or peruse the vegetarian/vegan section in cookbook stores for recipe ideas. You can also get inspired from various cultural cuisine eg. Moroccan, Indian, etc.

Staple items to include in your stews:

  • pulses (lentils, peas, etc.)
  • root vegetables (potatoes, carrots, parsnips, etc.)
  • onions and garlic
  • flavourings (thyme, cumin, etc.)
  • vegetable broth
