In 2017, Mardi Gras is happening February 28. As a child I remember having pancakes in school for Pancake Tuesday or Mardi Gras. I may just revive that tradition tomorrow; and you can too. See below for a recipe and some ideas for flavours and toppings.
Basic pancake recipe
1 cup each of flour and milk, 2 tablespoons sugar, 2 teaspoons baking soda, ½ teaspoon salt, 2 tablespoons plus 1 tablespoons butter/oil, 1 egg
egg substitute: egg replacer, chia/flax egg, use of xanthan/guar gum, sweet rice flour in dry mix, banana (but your pancakes will taste like banana so for neutral taste use other options)
variations: coconut nog, red bean flour, gluten-free, blueberry, churro (cinnamon sugar)
toppings: maple syrup, walnuts, pecans (candied or nut), fresh fruit, guava jam, chocolate hazelnut spread, honey
