There are a variety of meatless sandwiches out there but veggies/cheese with two breads can get kind of boring. For something different, try turning your meatless sandwich inside out and make the veggies the bookends to hold the sandwich together. Here are some ideas:
- Grilled portobello mushrooms encasing a nut and lentil, topped with lettuce and tomato.
- Grilled eggplant slices surrounding even more grilled veggies ie zucchini, red pepper with a bit of halloumi cheese or za’atar crusted tofu for a protein hit.
- Romaine lettuce wrapping around tofu strips, some pine nuts, shaved carrots and drizzled with a vegan caesar dressing.
