Food is key

March is National Nutrition Month and the theme for 2018 is “Unlock the potential of food.” Here are some tips to help you extract the most nutritional benefit that food can offer.

  • Soak your nuts prior to preparing and sprout your grains and beans prior to cooking.
  • Avoid cooking olive oil and nuts on high heat.
  • Cook tomatoes and carrots. When raw, their nutrients are less available.
  • Avoid food (and money) waste by using up leftovers and buying local and seasonal produce in small quantities on a regular basis.
