Meatless Monday – Beans are the new nuts

Thanks to my roommate on a trip to the Amazon, I have become obsessed with crunchy broad bean snacks. There are also roasted chickpea snacks and ‘chips’ made with bean flour. These legume snacks are ideal to carry around with you anytime. They contain significant amounts of fibre and protein and are lower in fat than nuts. No need to worry that a handful or more of crunchy beans will equal a full day’s worth of fat intake. Though a variety of flavours and beans are available you can also make your own.

Cook beans fully and let cool. Mix in a bowl with some oil and a bit of salt (or other flavouring) then bake in a 375°F oven for at least 20 minutes. Check crunchiness of beans every 10 minutes after until you reach the desired firmness.

Have some of these snacks on hand and eat a small portion every few hours to help stave off hunger. You can also use them to top salads and/or add to rice/couscous dishes.
